A quick simple idea with courgettes is to slice them thinly, grill them on a piece of aluminium foil until they soften, then sprinkle with a hard cheese of your choice and pop them under the grill again until the cheese goes golden brown and bubbly. Parmesan is particularly nice, but they taste good with mature cheddar too.
Courgette ” meat ” balls on page 149 of Sarah Raven’s book Food for Family and Friends. I used it last year when I had a glut of courgettes. They freeze well too in the tomato sauce.
Courgette Fritters from the Hairy Bikers Cook Book – they are delicious and can be frozen, they remind me of a onion bahji or pakora…yummy!
Shred the squash or courgettes with a grater or food processor. Add to chili, soups or stews. You can freeze it by the cup or half cup in sandwich bags for winter.

I make lotta-touille, slowly fry off lots of onions and garlic in olive oil and thyme then add either a tin or lots of skinned fresh toms and the courgettes, continue to fry slowly until everything is soft then add water and a generous squirt of tom puree and half a teaspoon of sugar, salt and pepper and a squeeze of lemon juice. Goes with roast or grilled meats and freezes well. You can also use those larger courgettes!
Lemon and yellow courgette risotto is cheeful looking and tastes great – you can use fresh lemon or preserved lemons. I tend to peel the corgettes as the yellow skins are a bit tough.
I made this yellow courgette chutney a few weeks ago but it’s still maturing so I’m yet to try it! –
I like to hollow out the corguette, fill with slightly spicy mince/chilli cover with cheese and bake in the oven for 35-40 mins, very tasty and relatively healthy
We made dilly squash this year. Use same recipe as dilly beans.
