Sorted!

My sister-in-law is sorting Cucumber, yellow Squash and Courgettes – now what to do with them all? Any recipes ideas for her?

Before she forces me to take some home :)

  2. Courgette ” meat ” balls on page 149 of Sarah Raven’s book Food for Family and Friends. I used it last year when I had a glut of courgettes. They freeze well too in the tomato sauce.

  3. Courgette Fritters from the Hairy Bikers Cook Book – they are delicious and can be frozen, they remind me of a onion bahji or pakora…yummy!

  4. Shred the squash or courgettes with a grater or food processor. Add to chili, soups or stews. You can freeze it by the cup or half cup in sandwich bags for winter.

I make lotta-touille, slowly fry off lots of onions and garlic in olive oil and thyme then add either a tin or lots of skinned fresh toms and the courgettes, continue to fry slowly until everything is soft then add water and a generous squirt of tom puree and half a teaspoon of sugar, salt and pepper and a squeeze of lemon juice. Goes with roast or grilled meats and freezes well. You can also use those larger courgettes!

  8. I like to hollow out the corguette, fill with slightly spicy mince/chilli cover with cheese and bake in the oven for 35-40 mins, very tasty and relatively healthy

  9. We made dilly squash this year. Use same recipe as dilly beans.
